This updates the following libs to the latest patch version: - Spring Boot to `3.4.10` - Spring Cloud to `2024.0.2` - Spring Framework to `6.2.11` - Spring Functions Catalog to `5.1.1` Also removes the version override in dependency management for: - Commons Lang3 - Spring Cloud Function (project build and stream apps core) Also specifies the version on `confluentinc/cp-kafka` docker image from `latest` to `7.5.0` as the latest image was causing havoc w/ its absence of Zookeeper.
