CI: Update Github Actions workflow token use

Description

Update GitHub Actions workflows to use the built-in repository token.

Motivation and Context

Current workflows break when attempting to create a release with a finished formula update.

This also matches the token used by Homebrew's template workflows.

How Has This Been Tested?

Needs to be tested on CI.
