[Docs] [Maps] Remove reference to Kibana Server in EMS Server doc (#4415)
## Summary Kibana Server is not making connections to EMS (cloud or self-hosted) [since 8.0](elastic/kibana#116184), hence the docs are misleading and this small fix. ## Generative AI disclosure 1.
